The Valpolicella Classico DOC “Le Fradare” is a red still wine, produced with typical grapes from Valpolicella, with an alcohol content of 13%.

PRODUCTION AREA
Veneto, Valpolicella  Classica DOC area, grapes from our fields located on 400 meters above sea level. The soil is rich in clay, calcareous and tufaceous.

TRAINING SYSTEM
Pergola veronese with a density of vineyard of about 3,300 vines/Ha. Distance between the rows 3.5 m, distance between the trees 0.8 m.

VINIFICATION AND AGEING
Roller pressing with de-stalking. Fermentation at controlled temperature, not above 25° C. Short maceration for 7-10 days with two daily pump overs and two delestage for optimal color extraction, separation of the grape marc and ageing in stainless steel tanks for about 6 months.

APPEARANCE
The color is ruby red.

AROMA
Intense fragrant fruit aroma with prominent notes of cherries and small wild berries, hints of balsamic notes on the nose.

Savory flavor, delicate and elegant.

Pairs easily with uncomplicated first courses (pasta, soups) and all roasted and grilled white meats. Perfect also with fish and read meats, if poured at lower temperature.
