The Valpolicella Classico Superiore Ripasso DOC is a red still dry, produced with typical grapes from Valpolicella, with an alcohol content of 14.5%.

PRODUCTION AREA
Veneto, Valpolicella DOC area, grapes from our fields located 400 above sea level. The soil is calcareous, rich in clay and tufaceous.

TRAINING SYSTEM
Pergola veronese with a density of vineyard of about 3,300 vines/Ha. Distance between the rows 3.5 m, distance between the trees 0.8 m.

VINIFICATION AND AGEING
Second fermentation of the Valpolicella wine produced with grapes from Monte Tenda together with the marc of Amarone, for optimal color and body extraction. Filtering away of the marc and ageing in big barrels (2000 litres)  and in 500 litres capacity French oak tonneaux from Allier forests for 18 months.

APPEARANCE
The color is an intense ruby red.

AROMA
Intense aroma with sophisticated spicy notes of black pepper and tobacco. Intense fragrant fruit aroma with prominent notes of cherries and small wild berries, hints of balsamic notes on the nose.

TASTING NOTES
Elegant and velvety finish, rich body and soft tannins.

Pairs easily with all red meats and matured cheeses. Perfect also with risotto, especially risotto all’Amarone.
