Recioto della Valpolicella Classico DOCG is a red sweet wine, produced with typical dried grapes from Valpolicella, and it’s an expression of all the intensity and the complexity of the “terroir” where it comes from.

PRODUCTION AREA
Veneto, Valpolicella Classica, the grapes are from calcareous, clayey and tufaceous soils from Marano di Valpolicella area.
TRAINING SYSTEM
Pergola veronese with a density of vineyard of about 3,300 vines/Ha. Distance between the rows 3.5 m, distance between the trees 0.8 m
VINIFICATION AND AGEING
Hand selection of the best grapes, the best sun-exposed bunches, during the harvest. Natural drying process of the grapes in 6 kg wooden boxes for about 5 months, with an important weight loss of the berries which leads to an increase of the wine’s intensity. In February the grapes get crashed and starts a maceration for about 40 days with low temperature. When the wine reaches the perfect alcohol degree, the fermentation is stopped dividing the grape must from the pomace.The wine gets transferred in different barrels to make sure that the residual sugars keep high. Ageing in stainless steel for 6 months and in 0.75 l bottles for 3 months.
APPEARANCE
Very intense red, with violets hints.
AROMA
Complex aroma of violet and fruits in syrup, prunes and cherries. Spices, vanilla and cocoa hints, balsamic notes.
TASTING NOTES
Intense sweet flavor on the palate, very elegant and refined.

Excellent with chocolate, desserts of different kind such as “Sbrisolona” (a dried cake made in Mantova) and “Cantucci” (cookies from Tuscany). Aged cheeses and blue cheeses.
