TRAINING SYSTEM
Pergola veronese with a density of vineyard of about 3,300 vines/Ha. Distance between the rows 3.5 m, distance between the trees 0.8 m
VINIFICATION AND AGEING
Careful hand selection of the best bunches during the harvest. Naturally drying process of the grapes for about 5 months and maceration for 150 days at constant temperature of 13° C.
Separation from the marc when the wine reaches 12% alcohol content. Forced stop of the fermentation keeping the sugar content above 10%. Ageing in stainless steel tanks and in the bottles.
