PRODUCTION AREA
Veneto, Valpolicella Classica, exclusive selection of the grapes, from our fields, located at 400 meters above sea level. The soil is rich in clay, clacareous and tufaceous.
TRAINING SYSTEM
Pergola veronese with a density of vineyard of about 3,300 vines/Ha. Distance between the rows 3.5 m, distance between the trees 0.8 m
VINIFICATION AND AGEING
Hand selection of the best grapes, the best sun-exposed bunches, during the harvest. Natural drying process of the grapes in 6 kg wooden boxes for about 100 days, with a 40% weight loss of the berries. Fermentation started in stainless steel tanks at constant temperature of 18°C and ended in wooden barrels at very low temperatures, 10-15°C. Ageing in 225 l capacity oak barrels for 24 months and in 0.75 l bottles for 6 months.
APPEARANCE
The color is a deep, intense red, almost garnet red.
AROMA
Complex aroma with spicy notes and licorice scents. Cherries, raspberries and blueberries, spices and little vanilla hints.
TASTING NOTES
Intense flavours on the palate, with full body and evolving tannins.
